Officially produced in the Champagne region of France, Champagne is a sparkling wine made by using the secondary fermentation process to induce wine carbonation. The sweetness and flavor of Champagne is dependent upon how long the Champagne has been aged and by the dosage of sugar added to the bottle after the second fermentation.
Though reproductions are often found in other countries all over the world, true Champagne is only made in the Champagne region of France. Some countries even limit the usage of the word Champagne in order to protect the sparkling wine made exclusively in the Champagne region. In Europe, this is called it’s PDO status (protected designation of origin) and the status is enforced by the European Union. In the United States, however, some domestic producers are still allowed to use the term Champagne due to the country’s legal structures and special circumstances of producers.
