Calvados

Deep in the heart of Lower Normandy, the sweet and juicy taste of Calvados is being sipped from thin glasses. This delicious wine is made with the luscious apples in orchards used just for the purpose of growing Calvados, and this has been a traditional recipe since back in the 8th Century. In 1554 Lord De Gouberville procured the first distillation of the apple wine, and 50 years into the future saw that same distillation formed into a delectable Cider.

200 variations of the apple fruit are grown to satisfy the selection available for making Calvados. Producers have been known to use more than 100 different variations for even a single recipe. Amazingly, with 100’s of variations, only 4 main categories truly set the apples apart.

-Sweet: Often used in a Rouge Duret Varieties
-Tart: Usually end up in Rambult varieties
-Bitter: Mettais, Saint Martin Frequin and Binet Rouge
and
-Inedible: This one is pretty obvious

With any category or variety, it is common to find a bottles of calvados carrying an old Year. This is because both young and old calvados blends are used together, and the year represents the youngest apples placed into the blend.
